The mountains of Huehuetenango (way-way-te-nan-go) in the Western Highlands of Guatemala are known for exceptionally high-quality coffee. Dry, hot winds blowing from southern Mexico protect the coffee plants from frost at night, allowing the beans to mature more slowly and soak up more of the cherry fruit. This is what gives the coffee its sweet flavor.
